The last time I tired to make a balsamic vinegar meal it turned into a tar mess. Last time though, I substitued a different type of vinegar for the balsamic vinegar. This time I stuck with the recipe in hopes of restoring my faith in balsamic vinegar.
Crock Pot Balsamic Glazed Drumsticks

- 8 chicken drumsticks
- 3 tablespoons coconut oil (olive oil would work too!)
- 1/2 cup balsamic vinegar
- 3 tablespoons tamari (or soy sauce if you’re not GF)
- 1 tablespoon honey
- Put all ingredients into a ziploc bag and you can either freeze for a make ahead meal or let marinade overnight
- The next morning just dump it all in the crockpot and cook on low for 6-8 hours.
Conclusion: Not bad but not amazing…I was very happy that this turned out not to be a sticky mess. While the sauce is very unique and sweet, my husband and I didn’t love it. I wish I could put a finger on what we didn’t like but I can’t. I also think it needs to be served with a strong side dish(es). I just served it was baked potatoes. We were both still hungry afterwards but not for more drumsticks. So I guess I don’t think this is a terrible meal, just not the type of taste my husband and I prefer with our chicken.
