Need an easy but big meal for family members this week? I found one that included healthy and simple ingredients that will feed a full sized family.
Sausage, Potato & Pepper Bake

- 3 sweet potatoes
- 3 white potatoes
- 1 red pepper
- 1 green pepper
- 1 onion
- 1 lb sausage links
- Dice three sweet potatoes, three white potatoes, one red pepper, one green pepper, one onion, and one pound of all-natural sausage links.
- Mix these things all together with olive oil and salt, and bake at 375 degrees for 40 minutes.
- Top with ketchup or hot sauce.
Conclusion: Big meal! I tried to put it in a 9×13 casserole dish and it was overflowing. I had to transfer everything to a bigger Emeril dish. The flavor was great with this. The potatoes absorb the pepper flavor and the sweet potatoes add a little sweetness. However, I would suggest putting the ingredients on a baking sheet instead of a casserole dish or stirring everything half-way through cooking. A few veggies weren’t cooked through and soft. I plan to use a baking sheet next time (if I have one big enough…).
